And they also will use appropriate apostrophes - Women's single skating and Men's single skating!

They shouldn't. It's not a possessive, it's an attributive (adjective modifying the noun): the figure skating practised by men/women rather than the figure skating belonging to men/women.

I see. However I do occasionally utilize the term when appropriate. For example: Todd Eldredge is the finest gentleman to grace the ice in the history of our sport.
