I did a vegetarian potluck one year in college. We had pumpkin soup, carrot casserole, pumpkin bread and a lot of other stuff. It was pretty good, IIRC.

Hope it brings some flavor to the table. My MIL is absolutely lovely but her cooking is like a white people food joke a lot of the time. I can’t really handle turkey this year, so I’m all about the sides.![]()
I bake yams in the oven like potatoes and then peel and slice them and cook them on the stove in butter and brown sugar with pineapple (and I occasionally add pineapple juice to thin the brown sugar/butter mix so it doesn't burn). You cook them for a long time on low heat until the yams are "candied", turning them over several times. I don't think they're terribly gooey, but they are delicious (and the pineapple soaked with brown sugar are really good)! I don't know if that would upset your husband or not...If someone has a good sweet potato casserole recipe that is both good and traditional and won't upset my non-American husband like the maple-syrup-and-butter version did, I'd be ever so grateful.![]()

But our menu shall be:
Roasted turkey brined in a sugar/salt/orange solution
Sausage and green apple dressing
Parker rolls
Gravy
Mashed potatoes
Green beans (cooked all day in BACON FAT, no weird soup thing)
Peanut butter pie
I am going to devour the dressing and pie. Possibly the green beans.
I'd never had stuffing with sausage in it. Our stuffings are always meat free. The first time I had stuffing with sausage, I didn't even know that was a thing. With no warning, this delicious stuffing I normally adore suddenly had sausages in it.
What is a Parker roll?
I used to make those when my kids were little. Because I actually did things like that then.
I've always made sausage stuffing (and I am making it right now). I hate cornbread stuffing (awaits the wrathful arrival of @rfisher.
I would share my Mother's candied sweet potato recipe, but I don't think y'all would make it. Sweet potatoes, butter (lots) and sugar (really a lot), no wonder I'm fat![]()
That's what comes from being a Yankee. I'm not cooking and if I want dressing (the proper term) I'll be forced to eat the disgusting local fare, or just go for peanut butter and jelly sandwiches.

It's my Southern exposure that makes me dislike cornbread dressing, as in my mind, cornbread should be coarse and salty with crunchy edges, not that mushy ground-up dressing crap.
Now that I have cooked and/or prepared most of it for cooking, it looks like we will be having:
Appetizers: Bacon-wrapped shrimp, stuffed mushrooms, assorted panino
Dinner:
Turkey that I've dry-brined for days
Sweet potato casserole
Death by mashed potatoes
Sausage stuffing (not a speck of cornbread)
Roasted fall vegetables
Brussels sprouts with balsamic
Rolls
Gravy
Dessert: Cherry, pumpkin, coconut cream, and chocolate mousse pies and cheesecake with whatever fruit topping my SIL brings
