The only one I can think of offhand is Brian Orser.

Surely there must be some others. Especially in pairs and dance, where I don't pay as close attention.

If there are too few who fit the parameters of the thread title, we could expand it to "World or Olympic medalists who have coached students to World or Olympic medals."

Maybe Pierre Brunet?
According to Wikipedia, he was Carol Heiss' only top-level coach, but in Andree (Joly) Brunet's Wiki bio, it says that the Brunets coached together. So she shoukd be added, too.

I don't know if he was Hamilton's coach at the time SH won the OGM.

I think Szolkowy is the only one added for all of the team event only medallists.

Not quite coaching to an Olympic medal, but early on Gabriele Seyfert coached Anett Potzsch, until she was forced to move to Gabrielle's mother (Jutta Müller)

Maribel Vinson was the Olympic Bronze Medalist in 1932 and, as Maribel Vinson Owen, coached Tenley Albright to the Olympic Gold Medal in 1956.

Karol Divin was the 1960 Men's Olympic Silver Medalist and coached Brian Orser in school figures when Orser earned the first of his own two Olympic Silver Medals in 1984.
