Michelle Kwan's exhibitions always stood out for me; she just let all the emotion out:

Hands, 2000 Nationals
Red Violin, 1999 Worlds (prototype for her competitive program)

Although done in pro-am competition, one of my favorite performances of all time:
East of Eden 1998 World Pros of undaunted courage fame

Although it wasn't an exhibition, it could have very well been one. It was a very rare moment filled with talent from Robin Cousins and Cindy Stuart. They improvised a program during the 1999 Improv-ice challenge and it was spectacular. Both of them together was simply awesome.

Another favorite that could have very well been an exhibition program for Kristi was when she competed during the 1996 Fox Rock n Roll Championships.

Kwan's EOE from 1998 World Pros immediately came to mind, but if we are talking a program just as an exhibition, then any of Kwan's Dante's Prayer performances would probably would be my choice.
