Question about additional language keyboards on iPhone

A friend of mine likes to dictate into his iPhone or iPad, and he’s often wanting to dictate something in Spanish. I set it for him so when he presses and holds the microphone button, it allows him to choose English or Spanish. He picked Spanish and it works for around maybe 15 seconds and then changes back to English. If it changes back to English the speech to text thing does not work right when he’s speaking Spanish.

Anybody have any experience with this or suggestions? It is pretty strange.
