Say,I watched a Pairs video from 1961. But didn't see any Throw-Triple-Twist or Death-Spirals. Were they done back then? What about Ice-Dance moves? Were they always the same?

Both ice dancing and pairs skating have changed drastically over the years. The moves were not always the same.

The death spiral was invented in 1928 (with two hands), started being performed one-handed in the 1940s, and the Protopopovs created the variations in the 1960s. But not every couple would do it. I can't find when couples started doing triple twists instead of doubles or singles, but technical elements increase over the years. It has only been recent years that we started seeing quad twists (or quad throws), for instance.

Ice dance used to look much less acrobatic. Couples were required to stay touching except for a very short amount of time and had to skate very close to each other. Ice dancing was first competed at the World Championships in 1952 and the Olympics in 1976, so competitively, it is the newest discipline.
I'm sure you know about the compulsory dances, which are no longer skated at the highest levels. Ice dance was originally highly based in ballroom dance, now the dances are much less restricted.
