Thanksgiving Recipes

    I thought a special thread for Thanksgiving recipes was in order, as there were requests in the Thanksgiving Menu thread.

    Corn Bread Stuffing with Oysters

    6 cups 1" cubed stale or toasted cornbread
    4 tablespoons unsalted butter (I use Earth Balance margarine)
    1 cup thinly sliced shallots
    2 ribs celery, peeled & finely diced
    1/2 pound coarsely chopped mushrooms
    1 unpeeled tart apple, cored & finely chopped (Granny Smith, etc.)
    1 pint shucked oysters, drained
    1/2 cup cream sherry
    1 tablespoon dried thyme
    1/2 teaspoon ground cayenne pepper
    1/2 teaspoon freshly ground white pepper
    1 teaspoon salt

    Melt butter & sauté shallots until soft, in large skillet, medium heat
    Add celery, mushrooms & apple
    Cook 5 min, stirring occasionally
    Remove from heat
    Combine oysters, sherry, thyme, salt & peppers in large bowl
    Add corn bread and toss to thoroughly combine
    Taste for salt and add as needed
    Refrigerate and begin cooking timed to turkey readiness
    Preheat oven to 300' F
    Generously butter an 8x11x2" baking dish
    Add dressing to dish
    Bake 1 1/2 hour or until top is browned & crunchy
    Turn oven off and cover dish with foil
    Leave in warm oven for up to 45 min

    If you want something easier:

    1 Package corn bread stuffing
    1 pint oysters
    Follow directions for stuffing
    Add oysters & juice
