Crab and artichoke dip
1 cup mayo
1 cup sour cream
1 package of cream cheese (put in microwave to soften)
1 lb of crab meat (I use the fake kind) use food processor to finely cut
little bit of salt and pepper
1 can of Artichoke hearts (drain well) and finely chop in processor
mix them all together and put into a pan or pirex (sp)
Bake at 350 until golden brown.
Serve with tortilla chips, or crackers.
feed about 6-8 people.
Because this turns out to be a huge favorite, I always make a second batch. I divide it so I get some to keep and then take the rest to the party.

The only thing we do differently is to use Mexican or Italian sausage from the local ethical butcher (which also sells excellent locally made tortilla chips), and just squeeze it out of the casings; otherwise we follow it to the letter. I keep it on the kitchen counter in my plug-in fondue pot, so we end up grazing on it all afternoon.

I've dug into my library and found a few inspirations from American Sandwich, Cooking USA and Cookout USA, which each feature a dish from every state.
For New Jersey, we have:
- (drum roll!) New Jersey-style Pork Roll (aka Taylor Ham) Sandwich
- Saltwater Taffy
- Jersey Dogs (boil the dogs with celery salt, then grill, serve with standard m/k/r)
For New York:
- The New York Reuben (I actually use this version of Russian dressing on another NY-inspired sandwich)
- Cheesecake
- Spiedies (various meats marinated in Italian flavours then grilled)
For Massachusetts:
- Banh Mi (also known as a Vietnamese sub in Boston, apparently) - I make this often but wouldn't consider it appropriate for the Patriots!
- Clam Chowder
- Smoked Turkey (um, no)
For Indiana:
- Midwestern Pork Tenderloin Sandwich (basically it's breaded, with hamburger type toppings)
- Hoosier Meat Loaf (has oats, green pepper and allspice in it, mix of pork and beef - if I was going to do meatloaf, I think I could do better
)
- Beer Can Chicken (would seem ideal, if I ate chicken or drank beer)
Oh pulled pork for Indy. NY pizza.

Made this tonight and it's extra good. It's complex in it's flavors and just the right bit of heat. Word to the wise though...you need a BIG pot to cook this in, as it makes at least 12 servings. Which makes it great if you are having a crowd over. Highly Recommended
