For Galas for me it's Lambiel, Lambiel, Lambiel, and for Professionals- Browning and Gordeeva/ Grinkov.
My favorite of all time- not the least because it is an improvisation, or very close to it-

Couple of days ago I was driving and James Blunt " You're Beautiful" was on the radio, and I realized that I cannot herar that song without thinking of Stephane ( and I am not ecven an uber, though very much a Stephane- lover). Even though Jamie Sale's mouth has gotten her in some trouble lately, this would have be my favorite if I had to pick one.
It helps bigtime that one of my favorite singers, Hayley Westenra, is in this performance too.
