Indeed! So, I almost didn't have a pot big enough but this looks amazing!

I don't have the recipe -- it's in storage with most of my stuff -- but Karin von Aroldingen did a three-part series in "Ballet Review" describing George Balanchine's soup recipes. (They often cooked together, between rehearsals and performances.)

In Balanchine's recipe, the beets are baked first. I made this recipe once, and it was delicious -- the baking gives the beets a deeper flavor. You peel them after they're finished baking.

I also like to use dill. I can't remember if dill was in his recipe.
