For Galas for me it's Lambiel, Lambiel, Lambiel, and for Professionals- Browning and Gordeeva/ Grinkov.
My favorite of all time- not the least because it is an improvisation, or very close to it-
Lambiel, Worlds Gala 2006 http://www.youtube.com/watch?v=dKpRFzpZjB8
Couple of days ago I was driving and James Blunt " You're Beautiful" was on the radio, and I realized that I cannot herar that song without thinking of Stephane ( and I am not ecven an uber, though very much a Stephane- lover). So here- I could not find another youtube version with sound as it is blocked: from Grand Prix Final- "You're Beautiful" - http://www.youtube.com/watch?v=TTHu0K8jo34
Here's "Falling Leaves" by Usova/ Zhulin (Olympiv Gala '92)- I believe I actually saw the link here first, though I adored them in their day- terrible quality video, but heavenly musical performance- http://www.youtube.com/watch?v=a9hcTzCj0dE
And, last but not least, my first figure skating crush- Igor Bobrin- his Exhibitions were a revelation in Russia in his day- and I find his EX numbers age very well-
"A Cowboy"- 1981- http://www.youtube.com/watch?v=i4Qg31eD3Rc
"Paganini" http://www.youtube.com/watch?v=vMhc5s0lLoI
FABULOUS parody on Pair skating- http://www.youtube.com/watch?v=wk9RISijzOc

Even though Jamie Sale's mouth has gotten her in some trouble lately, this would have be my favorite if I had to pick one.
It helps bigtime that one of my favorite singers, Hayley Westenra, is in this performance too.

It's heartbreaking, but Michelle Kwan's 2002 Olympic Exhibition Fields of Gold is right up there.
